Guacamole

vocadoes are tasty, and are very good for you. Guacamole is all about avacado. It's easy to make, and it makes me sad to see people put all kinds of crazy things into their guacamole. My version is simple and features just avocado, a bit of tomato, and a few spices. You can add red onion to it if you want, or even leave out the tomato. Experiment. This recipe makes enough for one good serving.

Begin by cutting the avocado in half. Run your knife all the way around. You can feel the centre pit when you slice into it. When you've gone all the way around, twist it apart. The pit will stay in one half. Remove the pit by smacking your knife into it, and turning the knife to twist the pit out. The pit will pop out still stuck to your knife blade. Carefully remove the pit from the knife.

Using a spoon, scoop out each half of the avocado. Set one half aside, and mash the other half in a small bowl. Cut the roma tomato in half, and scoop out the seeds and the juice. Dice the tomato, and mix it and the cayenne pepper with the mashed half of avocado. Grind the cumin and add it along with the lime juice to the avocado. If you have a small microplane grater, zest the lime as well -- there is a ton of flavour in the peeling.

Once everything is suitably mixed, take the other half of the avocado and cut it into strips. Arrange them neatly next to the mashed mixture and garnish with the cilantro. Enjoy!
