Granola
Here's the list of ingredients for this batch:
- 4 cups of whole grain rolled oats (not the quick cooking ones!)
- 1/4 cup of pumpkin seeds
- 1/4 cup of slivered almonds
- 1/2 cup of shredded unsweetened coconut
- A few tablespoons of a protein powder (I use hemp powder)
- 1/2 cup of sunflower oil (or other nut oil)
- A pinch of good salt
- 1 teaspoon of vanilla extract
- 1/4 cup of agave nectar (or some other liquid sweetener, like molasses)
- 1 tablespoon of cinnamon
Begin by pre-heating your oven to 250F. Low temperature for this. While that is warming up, whisk your wet ingredients together to combine uniformly. In a big bowl, mix all of your dry ingredients together and toss them well. Add the wet ingredients to the dry ones, and toss to coat evenly.
When the oven is ready, spread the mixture out in a thin layer on a sheet pan. Put it in the oven for an hour, checking on it every ten or fifteen minutes to make sure that it isn't burning. When you smell toasted oats and cinnamon and the oats start to clump together, it's done. Let it cool and store in a big container.
