Quick Broccoli Soup
Here's the list of ingredients:
- A few whole pieces of broccol
- A small handful of parsley
- Salt, pepper, and cayenne pepper to taste
Seriously, this is that simple to make. You do need a blender which raises the stakes a little bit, but that shouldn't be a problem.
Cut the broccoli, stems and all, into bite sized pieces. You're going to blend it smooth anyway, so precision is not important. You do want it to cook uniformly though, so make the pieces roughly the same size. I use a small metal steamer basket to make getting the broccoli out after easler, but it's up to you. Use a half cup to one cup of water, and bring it to a boil. Put the lid on, and let it steam until you can poke a knife into the broccoli, but you don't want mush.
Dump it all into a blender (cooking water included). Add most of the parsely (you don't need to chop it), the salt and pepper, and the cayenne if you like it that way. Blitz until smooth.
Pour into a bowl, garnish with the remaining parsely finely chopped, and you're done.
If that took you more than ten minutes from start to finish you're wasting time. Here's how you make it more refined for a dinner party or something. This isn't vegan, but it is very tasty. Get a round of goat's cheese and cut it into thin rounds. Before you put the soup in the bowl, stack two or three rounds of cheese in the middle of the bowl, off angle. Pour the soup *around* the cheese, not on it, so the cheese stays clean and the soup will fill in the gaps. Garnish with chopped walnuts and go from there.
